Sometimes black coffee or cinnamon is added, but some people don't stop there and look for new sources of flavor.

Considered fast food in Europe, shawarma is actually a traditional food in eastern countries. Even the ancient Arabs wrapped finely chopped grilled meat in a piece of flat unleavened bread (pita or pita bread). They added salads and sauces to it, turning shawarma into a complete dish.

Today, this snack is often sold on the streets, where it is popular due to its cheapness and ease of consumption.

Ingredients and methods for preparing shawarma

You can use any meat for shawarma: lamb, beef, chicken, pork. It is the main component of the dish. The remaining ingredients (vegetables, sauces, additives) may vary depending on seasonality and taste preferences.

At public fast food outlets, cucumber, tomato, onion, and cabbage are often added to chicken meat. Cheese and mushrooms can also be components of shawarma. Instead of traditional sauces, it is flavored with mayonnaise and ketchup.

The usual preparation of shawarma comes down to vertically frying the meat, cutting all the ingredients and rolling them into pita bread. According to the rules, meat should be cooked on a vertical grill. Threaded on a spit, it rotates around an axis and is evenly fried on all sides. The finished top pieces of meat are cut off in a thin layer and then finely chopped.

Calorie content: how many calories are in shawarma

This nutritious dish does not belong to the category of dietary. The average number of calories in it is from 240 to 290 kcal per 100 g. The selected meat, vegetable additives, and special sauces directly affect how many calories the shawarma will contain.

The most dietary appetizer will be chicken breast with vegetables and low-fat sauce - 150-170 kcal.

Features of recipes in different countries

There are many recipes for making shawarma, so there is no definite answer on how to cook shawarma correctly. Each country has long brought its own culinary traditions to this dish.

Azerbaijanis usually serve sweet and sour white sauce with shawarma, pouring fat tail fat over the pita bread. In Israel, there are no dairy additives at all, and the favorite seasonings are pickled mango, hummus, and sesame sauce.

In Mexico, shawarma meat is marinated in a spicy red pepper sauce. And the Germans often use minced sausage roasted on a spit instead of pieces of meat.

The simplicity of preparing shawarma contributes to its street sales in large volumes. However, rancid or burnt meat, store-bought sauces, and low-quality vegetables can ruin any snack. But to fully enjoy this juicy and tasty dish, it’s easier to make shawarma at home. It will turn out to be much cheaper, safer and tastier than any street option.

Turkish snack

Döner kebab is a very filling snack made from lamb and vegetables, which is made in Turkey. Of course, lamb can be replaced with chicken or pork, but then it won’t be the same food. To make it easier for you to make it, we offer you a step-by-step recipe to help you.

For 2 servings of doner kebab you will need the following products:

  • 300 g lamb pulp;
  • 50 ml soy marinade;
  • 20ml balsamic vinegar;
  • 2 whispers each of dried thyme, suneli hops, ground pepper;
  • 50 ml Oleina;
  • 30 g mustard;

  2. Then we pack the lamb in foil so that the resulting juice does not leak out during baking. Cook in the oven at 180 degrees for about 40 minutes. Let the baked meat cool slightly and cut into centimeter strips.
  3. Shred the cabbage, chop the tomato and cucumber. Finely chop the cilantro leaves and garlic. Mix everything and season with mayonnaise.
  4. Divide the pita in half. Place lettuce and meat in layers in the middle. It is better to warm the finished döner kebab slightly in the microwave.

Now we will prepare the most authentic shawarma in lavash at home. It’s no secret that sometimes you really want to savor such a dish of “Eastern nationality”, feeling its aroma emanating from street and stall vendors, but your inner intuition suggests that this product is quite dangerous and food poisoning is quite possible. After all, it is not always known from which hands we receive it, wrapped in a paper napkin. It is much easier to make shawarma at home with your own hands and not only satisfy your loved ones with an essentially excellent product, but also be sure that it will be tasty and, most importantly, safe.

Ingredients for preparing shawarma in pita bread:

Thin lavash (Armenian, unleavened, large)
chicken meat (half a kilo)
cabbage (white or red, 200 grams)
1 carrot
for the sauce – mayonnaise, ketchup, mustard sauce (optional)
spices (vegetable oil, lemon juice, salt, pepper, other seasonings)

Boil the chicken until fully cooked, cut into small pieces. Cut the pita bread into portions with a knife (4-6 servings). Shred the cabbage into thin strips. It is advisable to grate the carrots using a Korean carrot grater. Add spicy spices, pepper, vegetable oil, or chopped garlic to the carrots and leave in this marinade. The cabbage should be seasoned with lemon juice (or table vinegar, but just a little, just sprinkle), as well as vegetable oil.

Take one portioned piece of lavash and place it on the table. Lubricate it with a mixture of ketchup and mayonnaise. Add cabbage, chicken, carrots (lightly grease the top with mayonnaise). At this stage, you can add other ingredients that are prompted by the desire and imagination of the housewife - for example, fried mushrooms, grated cheese, sliced tomatoes, grains and others. The filling in the pita bread needs to be wrapped in an envelope.

Next, the shawarma is heated in the microwave. Either you can fry it in vegetable oil on both sides and in a frying pan, or in a dry ceramic frying pan on both sides, without adding oil. Serve immediately.

This dish should not be prepared for future use. It's better to eat right away. Otherwise, over time, the pita bread becomes “wet” and breaks. But if you want to take such a roll with you to a picnic, you can wrap each portion in separate foil. This way the dish will remain warm and the juice won’t leak out, getting your hands or other provisions dirty in your picnic bag with groceries.
